Blog Button!!

I have FINALLY succeeded on making a darned blog button! I think that I've been using the wrong link to my picture this whole time.  It's always something so simple, isn't it?

Smell the Roses

Lovely Little Things


Today I am linking up with Jessica at Lovely Little Things for Smell the Roses! Her task for last week was to write a list of 5 things that you love about yourself. Here goes nothing....
1. I love me because... I am POSITIVE. Almost all the time. It's sickening to some, I think.

2. I love me because... I care. A lot. About EVERYTHING. If I had the money I would sponsor ALL the children. And dogs. And monkeys. You get the picture.

3. I love me because... I know I am most beautiful in sweat pants and no make-up. Thank-you to Hubby for helping me accept that :)

4. I love me because... I make up words. Like slidey (slippery, really). Because sometimes life is difficult and boring and new words make it fun.

5. I love me because... I am me and not a paper clipped copy of my friends or celebrities. I don't care if yellow shirts are in style. Mine is green. Deal with it.

Hey, Good Lookin'! Whatcha got cookin'?

I have decided to start turning Saturday into "Hey Good Lookin', Whatcha' Got Cookin'" Saturday.  If I can ever figure out how to work those darned buttons (grr) I might even make a button for it!

Clean Kitchen Breakfast Burritos

 You will need:

1 lb ground breakfast sausage
1 lb bacon, strips/ends and pieces-it's all good!
1/2 medium onion, diced
4 medium potatoes, cleaned, slightly cooked (micowaved about 3 mintues) and diced
8 eggs
20ish small flour tortillas
16 oz. shredded cheddar cheese
a few spoons of flour
milk
2-3 tbs. butter
cooking oil - I like canola 
pepper
salt

Let's get started!

Pour a little canola oil into your fry pan and let it warm up.  Add your diced onions and let them cook a minute then add your potatoes. Salt and pepper to taste.



Let the potatoes cook for approx. 5 minutes on medium/high heat. You want them to get nice and crispy. Use a spatula and flip them over to cook the other side. When they are to the cripsyness of your liking, drain on a paper towel.

Meanwhile, slice your bacon into small pieces.  This is easily done when it's still frozen.  Cook to preferred doneness.  My breakfast sausage was already cooked so I threw it in with the bacon to warm it up.  Otherwise you would just cook up your sausage after/before your bacon.  I let both drain on a paper towel.


Crack your eggs in a bowl and whip them with a fork/whisk. Pour them into a lightly buttered/sprayed pan and cook till they are slightly runny.  


Turn off the heat and add your potatoes, bacon and sausage. Depending on your pan size you may need to mix them in a large bowl. 


Lay out your tortillas on the counter. 


Place a small about of shredded cheese on each tortilla followed by about 2 spoonfuls of egg/meat/potato mixture. 



(This next part is optional.  Hubby and I like it because it gives more flavor to the burritos and it gives a nice balance to all the dry ingredients. You could also use a white gravy packet instead of making it yourself.)

Melt about 2 tbs of butter in your pan.  Add about 2 tbs of flour and whisk together.  It will become thick and clump-like.  Add a couple shakes of pepper, too.   Pour about a cup of milk and start whisking.  If it feels really think, add a little more milk.  Keep doing this till you get a nice smooth, white gravy.  I turn the heat off after the first cup of milk.



Spoon gravy over each burrito. Just enough to sort of "wet" the ingredients but not so much that it's spilling off of each tortilla. Then fold each burrito and place seam side down on baking sheet. I left the ends of mine open because I filled them a little too much! 


Bake Time/Temperature: This is where the clean kitchen part comes in! Your bake temperature/time depends on how clean/messy your kitchen is. If you just need to put a few things into the dishwasher and wipe down your counter tops then cook at 400 degrees Farenheit for about 8-10 minutes. If you need to unload the dishwasher, reload it, wipe your counters and the floor could use a good sweeping then you'll probably want to knock the temperature down to about 365-375 for about 20 minutes. 




Yummy! Enjoy breakfast..or in our case a late brunch...in your clean kitchen!

High Five Friday!

1- Taking Dayton and Ella to the Snow Fest.  Even though it was super cold and we didn't stay long, I loved spending time with them!  Check it out here.



2- I passed all three tests I took this week!  Thank you, Jesus!!



3- I made it through all 31 days of January without taking even one sip of pop!  I did get a small fountain pop between my lecture and lab on Wednesday....and it didn't taste as awesome as I thought it would.  I blame it on Hubby and his delicious bubbles!  Read about it here.



4- While I was avoiding homework checking out some other awesome bloggers pins, I came across this pin and about died laughing.  That always makes for a good day!



5- Hubby found his wedding ring!  He lost it at a friends garage on Wednesday and found it on the ground there last night.  Turns out that orange goop removes more than just grease from hands!


I would love to get these for one of our landmark anniversaries!

Let's get Carbonated!

...or not.  I am SO proud of myself!  Today I am 31 days pop free!  I don't think that pop was a really big part of my diet before because I haven't noticed a weight loss.  Or it could be that I replaced it with raspberry tea.  Let's go with the first..makes me feel better about myself!  Hubby has been taunting me with Pepsi the last week.  He'll take long drinks and tell me how delicious the bubbles are.  Meanie!  I so badly want to buy a fountain pop tomorrow between my lab and lecture but I'm on the fence about it.  It's already been 31 days...why not make it 32 and then 33 and so on?  But Hubby and his darned delicious bubbles are making it hard for me resist!  AH!!

Snow Fest!

Hubby and I along with our niece, Dayton, and some friends went to Snow Fest in Frankenmuth on Friday night.  It was cold!  We had fun despite the coldness!

How cool are these snow sculptures?!




The mirror maze was a ton of fun! It was really expensive, though. Regular price was $8 per person, no matter the age. As it turns out, I had the hook-up! I went to high school with the woman who ran it. Score!


Before we went on Friday night, I had already planned to take Dayton and Ella (another one of our nieces) on Saturday. So we got to go two days in a row. Lucky us!


It was really cold and windy on Saturday so we didn't do much. We did go to the petting zoo though!

Ella took one look at the camels and said, "I don't like the camels, Uncle Buddy."  So cute!

Dayton kept calling the goats baby camels. HA!
Then we did pony rides! The girls LOVED this part. Who wouldn't?  I made them wave at me!


Since it was so cold we decided to take the girls to McDonald's for lunch and some playplace fun. I think they enjoyed their day!
