Why yes, I do talk to inanimate objects

Dear Fitted Sheet Corner,

When I fit you over the corner of my pillow top mattress, I expect you to stay there until I decide it's time to remove you.  I dislike having to re-fit you onto the mattress almost every morning.  I do appreciate your attempt at making it look like the Twilight honeymoon just occurred in my bed, however, it is not necessary.  Please do your job correctly so I can stop looking like an idiot talking to a fitted sheet while trying desperately to get it to fit back on the bed.

Check, Check, aaaaaaand Check.

First, I would like to thank you lovely ladies for all your well wishes for my brothers girlfriend.  I am pleased to say that she is out of ICU, in a normal hospital room, and it looks like she may go home tomorrow! She went home today!   HALLELUJAH!


Even though we had some scary moments this weekend I was able to check a few things off of my 101 in 1001!  WOO HOOO!

First, I bought a laptop.  It's not the one I wanted, or the second one I wanted, but it will do the job for now. Hubby said I should go get the one I wanted this summer and then he'll use this one for all his craigslist searching (no arguments there!)  He reminds me of Joe Dirt, when he's constantly looking at the auto trader but clearly doesn't have the money to buy any of the things that he finds.  Oh, Hubby...bless your heart.

Number 60- Check!

Second, Hubby bought a truck.  I don't know left from right about it.  It's red and a single cab.  When I ride in it it reminds me of High School and boys and gives me that crazy gooey feeling. You know the one..when a boy you liked picked you up in his truck.... yup, that feeling :)  Good buy, Hubby!

Number 77- Check!


Third, because of the Smell the Roses task from last week, I watched the sun rise!  Maybe I'll make Hubby take me in his truck to watch it set.  We can go "park".  hehe 

Number 44- Check!


Fourth-  I bought a fireproof safe!  It's not as big as I thought it was going to be (that explains the fantastic price).   Whatever...at least I finally got one!

Number 58- Check!



Whew!  I'm exhausted! 

In other news...I've found Camera Cord!  Just in time for the month to end!  So much for my picture project.  Maybe I'll try again in a few months?

Oh Friday...

Hello my Pretty Friends!!

Sorry I've been MIA the last few days!  I've been swamped as school and I babysat close to 10 tinys yesterday so my MIL and Aunt could go to a funeral.  

No High Five Friday today (or Good lookin' cookin' tomorrow) :(  Hubby and I are going to a funeral of a dear family friend.


I'll be back on track on Monday.

Ramblings of a Crazy Lady



Why is medical terminology only one credit?  There are 50 pages of words to learn in one week.  It's not like I have other classes to study for ...

I swear I left Camera Cord with Cell Phone Cord.  Why is it that when I look for one it's not there with the other?

Is it really necessary to yell your entire conversation when you're sitting 6 inches away from each other? COME ON!

Does the laundry basket have the flu?  Because for some reason even though I pick up the clothes off the floor EVERY DAY, when I wake up in the morning it looks like the basket threw up.  

Must you tell your life story in every Facebook post?  I don't care who you're sleeping with, who they are now sleeping with, or who you wish you were sleeping with.  You all should keep your legs closed and find something more constructive to do with your time.

Why is your child wearing a t-shirt and no socks in the middle of winter?  Did you forget it's freezing outside?  

My right blinker is on because I want to merge right.  It doesn't mean keep pace with me so I can't get over.  JERK! 

Nobody cares what your underwear look like.  PULL YOUR PANTS UP!

Hey Good Lookin'! Whatcha Got Cookin'?

Homemade Mozzarella Sticks


(I doubled the recipe for superbowl-that is what is pictured)

1 package string cheese
1 1/2 bags Italian croutons
2 eggs, raw, beaten, with a splash of milk - in a bowl
1 cup flour in a shallow bowl
wax paper or a baking sheet


Unwrap all of your string cheese and cut in half so you have little "stubby" string cheeses. Set aside. Grind your croutons into crumbs.  I use this mini food processor.  My mom got it for me one Christmas and I LOVE it.   I find it easier to place them into a deep bowl for maximum coverage but if you prefer a shallow one , more power to you.




Set up an assembly line, flour, egg, crouton crumbs, wax paper/baking sheet

See the "stubby" string cheeses?

Starting with the flour coat your cheese "stubbs" one or two at a time. Then coat in egg mixture and finally croutons.  Place on your wax paper/baking sheet.


Now repeat the process WITHOUT the flour!  Coat in eggs and then croutons.

See the difference?  Left- one coat.  Right-two coats

For best results let them chill in the fridge until you're ready to cook.  For a quicker chill, place in the freezer for an hour.

There were three layers in this container!  They didn't last long!

  WARNING!  The first time I made these I left them in the freezer for a few hours.  When I tried cooking them the outsides cooked but the inside didn't!  So if you forget and leave them in the freezer let them thaw a bit on the counter before cooking!!

Fry in cooking oil at 375 (F) for a minute or two.  The outside will have a nice brown color when done.





So melty and delicious!

Number ONE:

Ask and you shall receive.  On Monday I was having a terrible time finding a parking spot on campus.  Almost as soon as I prayed for one..TADA! Rockstar parking!  Then, while waiting for my Medical Terminology Professor, I prayed that she wouldn't give us the weekly quiz.  The chapter was so big and I think I was just overloaded with information.  Once class started she informed us that she wrote the quiz for next week by accident.  NO QUIZ. Thanks for the awesome Monday, Lord!!!



Number TWO:

My followers have DOUBLED in the last week!  WOO HOO!  You guys are awesome!  I'm contemplating a give away....we'll see ;)




Number Three:

My writing Prof informed me that proof reading/grading my papers was easy (because I use complete sentences and such)  AWESOME!  Because, I hate writing them!  HAHA!

Today is Lailah's 2nd Birthday!  So that means a spoiling is about to occur from Aunt Trish and Uncle Buddy!!  Spoiling = tons of fun for me!!

Oh how I love thee...

I've never really been into all the mush, gushy of Valentines Day.  Good thing too because Hubby does not enjoy the "hallmark holiday" as he calls it.  SO...I'm going to share some blog love!  YAY!!

Lovely Little Things
Last week's task was to leave an inspirational note somewhere for a stranger to find.  I took it as an opportunity to work on number 50-  leave 100 operation beautiful stickies.  I had a lot of fun leaving them in bathrooms and on table tops when I left class.  I hope that the morale on campus was a little higher last week because of me!! Thanks, Jess, for the task!  30 down, 70 more to go!
I can't believe I spelled that wrong!  I should have stuck it on the men's room door! HAHA!
I have no idea how I managed to take this upside down.

Hey Good Lookin'! Whatcha Got Cookin'?

Potato Salad Bites



They were so yummy!

12 red potatoes, cleaned
mustard
mayo
dill relish
1/4 onion, diced
2 hard boiled eggs, peeled, chopped
salt & pepper
cooking oil
2ish radishes, sliced-for garnish


Give your potatoes a rub down with some cooking oil and place them on a cookie sheet.  Bake at 375 (Fahrenheit) for about 20 ish minutes.  You want them done in the middle.  Take out of oven and let cool.


I made these for Bunko-that's why there's more than 12

Slice a small piece off of each end and then cut in half.  You want each half to be able to "stand up" on the cookie sheet and not wobble like weebles.



See how the ones on the bottom left stand up and don't wobble like the others?
Take a small melon baller- I used a rounded teaspoon- and dig out the middles of the potatoes.  Leave about a quarter inch of flesh around the skin.


Run a knife through your pile of potato insides to chop them up a bit and then place them into a medium size bowl.



This is the part where you make the actual potato salad.  If you have a special family recipe then by all means use it!  This part is completely to taste!

Add about 2 spoons of mayo, one of mustard and relish, your hard boiled eggs and your diced onion.  Salt and pepper to taste.  Mix until all potato pieces a covered with wet ingredients.



One by one, scoop potato salad into potato skins. Add a slice or two of radish for garnish.



Chill and serve.  No plates or silverware needed!!
YUM!

This week has been chuck full of nothing but studying and going to classes.  Forgive me if it seems like I'm pulling strings to make it to five things!  (that rhymed! haha)





1. Hubby got a new job!  YAY!  It's not the one he wanted, but it is a foot in the door and money coming in.  That's all that matters!



2.  I received my loan disclosures this week that told me when my student loans should be disbursed.  New computer coming soon!  HOLLA!



3. Hubby talked with his old boss and got things squared away with his w2.  Taxes will be (hopefully) filed this week.  Double HOLLA!



4. I talked with my Mama. I miss her so much!



5.  Our niece Lailah is here this weekend.  She kept asking for me and didn't want me to stop playing with her so I could study.  Melts my heart :)
